Vegan Crispy Green Lentil Salad

Crunchy apples, tiny lentils, roasted sunflower seeds and a tart dressing bring this salad together in a medley of satisfying flavours.

  • 75 g green lentils(beluga lentils)
  • 150 ml water
  • 40 g mixed salad leaves (arugula, iceberg lettuce)
  • ½ dices apple
  • 1 sliced spring onion
  • 1 tbsp Dijon mustard
  • ½ tsp vegan honey (maple syrup
  • 1 tbsp white wine vinegar ( balsamic vinegar)
  • 1 tbsp virgin olive oil (hazelnut oil, sesame oil)
  • Optional: unrefined salt, black pepper


  1. In a pot, bring water to a rolling boil.
  2. Cook lentils on high heat for approx. 2 minutes then let simmer on low heat for approx. 30 minutes.
  3. Drain lentils and let cool.
  4. Mix with remaining ingredients and season with salt and pepper to taste
